Chef Gregory prepared Sous Vide Spiny Lobster and Cockles, Jerk Tofu, Turmeric Broth, and Carrot Air, just for the viewers.It’s a really different and unique way to prepare lobster, interesting use of tofu in a spicy lobster flavored broth garnished with fresh zucchini, squash and organic leaves topped with carrot air.The filming was coordinated by Restaurant Manager Clifford, Executive Chef Jean and Chef GregoryFor more details see Chefs of Antigua Facebook page.
